Sweet Potato Fries

I'm going to start with something SIMPLE but also extremely delicious. Over the last few weeks since I have been back in LAX, I have found myself making sweet potato fries 1-2 nights per week. Sweet potatoes are high in vitamins A, C and B6, as well as antioxidants and fiber. The not-so-appealing-looking-orange-ish-brown-ish things are actually quite good for you! These fries have no added oil, so they are low fat as well.
I have been enjoying them with a turkey or veggie burger and some ketchup :)

Here's how you make them:
Preheat the oven the 400 degrees.
Dice up a potato into long, fry like strips (you can peel the potato first if you don't like the skin, wash them if you leave the skin on).
Spread them out on a lightly greased cookie sheet, I use a few spritzes of cooking spray
Sprinkle the fries with desired seasoning (I use lawyrs seasoning salt)
Bake the fries 20-25 minutes, depending on how thick they are.
I tend to check them after about 15 minutes and flip them over with a spatula.
They will be golden brown when the are done.

Back at it

I have to admit, I am a bit shocked with myself and my idea to continue blogging after my Ireland trip. I laughed at the idea of blogs until a friend mentioned that it would be a great way for me to keep friends and family updated while abroad. Well, here I am. Back from Ireland and wanting to continue writing.

I read a novel this summer, "A Homemade Life," by Molly Wizenberg. and was deeply inspired. At the end of the novel, Molly mentions that she started a blog called Orangette, and I have been addicted to her blog ever since. Molly expresses her love for food, cooking, family, and photography on her blog---and I hope to do the same on mine.
I have come to realize how much of my life revolves around food---my family has a love of cooking food and sharing meals together, my mother is a nutrition educator, always keeping us in line and up to date on nutrition, and my sister's recent diagnosis of celiac has caused us to try many new things. In addition to my love of good food, I have a passion for health. I try to incorporate this in the way that I cook and the lifestyle that I live. I hope to blog about my favorite recipes I make often, as well as the new ones I try. I'm sure some other information and stories will appear in my blog, as I often to tend to stray from my original plan. In no way do I claim to be a good cook---but I enjoy myself and I like to think that I am learning. Hopefully my blog will give you some good information and some good laughs. Maybe someday I will be able to bake like Molly Wizenberg.

p.s. I will be changing the name of my blog as soon as I come up with a more fitting title :)
